Super Bowl Food Ideas

I asked my Twitter friends for ideas for Super Bowl Food...@fattie20xl suggested a yummy sounding cheese and sausage dip. My husband and friends always request my really easy dip.  There is never any left.  I thought I'd share it with you:


1 block of Cream Cheese
1 Can of Medium Salsa (of course use hot or mild if you choose)
2 Cups Shredded Cheese (I prefer Sharp)
Layer the bottom of a casserole dish with the cream cheese (I prefer to let it soften prior to making this)
Spread the Salsa over the cream cheese (use as much or as little as you prefer)
Sprinkle as much cheese over the top as you choose
Bake at 350 degrees for about 30 minutes
Serve with Tostitos syle chips
*Warning my Dad (who hated cheese) referred to this dip as "moreish": you always want more!


Another of my faves is this one:


2 cups shredded sharp cheese
Small can of green chiles
One bunch green onions
Package of Ham-cut up
3/4 of a cottage cheese container
1 block of cream cheese cubed
Mix all together and fill a hollowed out Hawaiian bread bowl. 
Cover with foil and bake at 350 degrees for about an hour, then remove the foil for a few minutes.


Serve with bread or chips


Lots of times we'll just do what we refer to as "Race Food" since we normally eat it when we are watching a night race such as Bristol:


Dice up chicken in bite size pieces, saute with soy and butter-put in bowl
Heat up a jar of Cheese Con Queso-put in bowl
Dice jalapenos-put in bowl
Sour Cream-put in bowl
Tostito Chips-put in bowl
Whatever other toppings you prefer-put in bowl
Lay out all the bowls on a coffee table in from of the TV and commence to make "race food"

The first one sounds really good. We usually have hot wings, cocktail sausages(with the sweet bbq sauce stuff), meatballs, french onion dip and chips, and other random things. This year I am not making a bunch of stuff though.

Mmmm. I love cheese. We also love "finger food" type things just laid out and everyone helps themselves.
